I accepted a job offer from a company, received a company email and I am completing their training modules prior to starting in 3 weeks. But, I haven’t signed anything with the company yet. Should I quit with my current employer or should I wait?
Thank you!

Wait until you are happy that you have got the job.
If you're enjoying it so far just let the flow take you where you want to be
Did the company email make you an offer of employment? Did it say that you are offered the role of ???? commencing on a specific date?

@Maydun yes they emailed me an offer letter with a start date
In that case you are hired and safe to quit the current job.

I'm interested in whether this is the job you wanted. If not, don't think about your resume. Design it, make it more attractive, structural and interesting. If you can't do it yourself, then turn to professionals like https://skillroads.com/blog/warning-signs-you-are-about-to-get-fired for help. Then you will be sure of the resume. After all, this is the first thing that the employer sees and that makes an impression on you.
Some companies give documents to sign after some test tasks have been made by the candidate. Anyway, it is always better to double-check this question with the hiring manager. I would also recommend an affordable resume writing service https://resumeperk.com/blog/can-cheap-resumes-service-actually-get-you-more-interviews. It contains a useful blog with answers for job seekers.
