According to Gorden Ramsey. SR flour is okay for pancakes. The edges will rise slightly.

From an old Be-Ro cookbook using self raising flour. My Mum had one I bet yours probably did too
Tilly; Courage! What can go wrong with a pancake! Make the batter in good time and let it rest so that the self-raisin' can exhaust itself. All it can do is make the pancake a little bit lighter.
Actually, pancakes can go wrong, but not because of the self raisin'. They can miss the fryin' pan on the way down, or they can be left to burn in the fryin' pan, or they can be too thick or too thin.
OMG! There's so much that could go wrong!

Self raising flower is fine Tills ... the pancakes flip themselves when one side is done. (^_*)

Just to let you all know.
My first pancake was too thick but delicious.

The rest of them were just perfect and delicious. We had four each. :-)
