Mincemeat without suet?

Hi,

Does anyone know of an alternative to suet which I can use when making homemade mincemeat please? ...bearing in mind I'm on a low saturated fat diet, in fact the only fats I eat are things such as olive oil, sunflower oil and the like which are high in the Essential Fatty Acids (the Omegas 3, 6, 9)

I find that suet can be easily replaced with a small amount of stewed apple as this works just as well in binding the other "dryer" ingredients and makes for a lighter mincemeat.

That sounds a great idea.
For years I lived in Kenya and we couldn't get suet. I started by grating hard margarine in instead. Then I just left it out completely. I still make mincemeat without any fat in it. It tastes delicious and no one seems to notice the lack of fat.
