In removing tree roots from around the copper pipe to my garden tap, I damaged the silver coloured tape that's wrapped around it. The pipe is quite new. Is the tape important? should I wrap some more around it before I fill in the hole? What kind of tape would it be?

Likely will be some form of insulation tape to stop the pipes from freezing. ThermaWrap is available at Screwfix
