Using a jar of curry paste.
Steam or fry the vegetables first, is that the way to go?

Lightly steam until just a bit more than ‘Al dente’. They should then soften when you come to Cook them in the future (assuming you’re freezing them of course). Add a bit of Garam Masala about 10mins before the end of cooking to really bring out the flavours.
Steam but not for long as you don't mushy veg in your curry.
Lightly fry the onions with a little garlic, a spoonful of cumin & a small knob of ginger if you prefer.
Season, adding paste & the veg let cook.
I would fry, just enough to start caramelisation around the edges. In ghee if you have it
I'd also fry...it intensifies the flavour. Or, you could even roast the veg..,depending on what you are using.
If you do fry, add some dry spices if you have them...cumin, coriander (seeds), mustard seeds.

Thanks all for your help.
The reason I asked is I bought a veggie curry from an Indian take-away. It cost £12 plus £3 for delivery and a £1.50 tip to the delivery man. I know I could make a lot of portions for less.
