Breaks my heart to do this to such a beautiful creature who must have been absolutely terrified.

The person who did it deserves the same. I wonder if more than one person was involved. Horses are big...

My mistake, I didn't read the link, but saw 'hunt' in the OP and assumed it was saboteur activity.

This was mindless cruelty with no misguided mission to explain it.

Whoever did it must be sick in the head. A slap on the wrist or a paltry fine will be given. They should be put in the stocks and left there overnight  or named and shamed.

My guess is the horse was killed first and then mutilated.

No idea.  Maybe shot, or stabbed in a vital organ. It would be very difficult to mutilate a fit and healthy horse in that way.
