Take out meat when done and leave to cool between two plates with a weight on - this can be done up to 24 hours in advance. Strain stock and use some for gravy the rest freezers well. When brisket is cooled spread a mixture of marmite thinned with a little hot water over the meat and pop in the air fryer on roast or a very hot oven 225C for 15 minutes to crisp up the outside.
Barry I'm a big fan or home made stock. Have you tried really reducing down the stock and storing in large ice cube trays? I do that then if we want a sauce with a steak its easy just to take out a small portion. Crisping up the brisket gives it extra flavour but you don't need the marmite you could just use some beef dripping or a bit of butter.
