Why doesn't all wine mature with age, and
do spirits and liqueurs go off in time, therefore should not be consumed once opened?

Spirits do not go off, neither do serious liqueurs such as Benedictine, Cointreau, Grand Marnier etc The maturing of wines is to do with the variety and quality of the grape, the climatic conditions of the year, the barrel process, age of vines etc It's complicated; there are many books on the subject - certain wines, notably good clarets, are designed to be laid down; others, such as Beaujolais to be drunk young; decent Burgundies within three or so years, generally speaking. Cheap plonk goes off since it's usually blended grapes and meets none of the conditions of fine wines!

Thanks alot Adrienne Thanks for the info. Glad to hear my half empty bottles of spirits & liqueurs are still OK. Can't be bothered with this laying down I will stick to the plonk and then fall down.
