Whitebait is the immature fry of fish, in this case of sardines and anchovies caught on the French Riviera

Whitebait is a collective term for the immature fry of fish, typically between 25 and 50 millimetres (1 and 2 in) long. Such young fish often travel together in schoolsalong coasts, and move into estuaries and sometimes up rivers where they can be easily caught using fine-meshed fishing nets. Whitebaiting is the activity of catching whitebait.

Individual whitebait are tender and edible, and are considered a delicacy in New Zealand.[1] The entire fish is eaten — including head, fins, bones, and bowels. Some species make better eating than others, and the particular species that are marketed as "whitebait" vary in different parts of the world.

As whitebait consists of immature fry of many important food species (such as herring, sprat, sardines, mackerel, bass and many others) it is not an ecologically 

I had some whitebait on Thursday - it was the best part of the Frittura mista. Yummy!

I love crispy fried whitebait with oodles of vinegar!

Are all the insides left in the fish? Isn't that dangerous as well as revolting 🤢

Other fish are eaten whole - e.g. Sardines (although some folk take the backbone out)

 

Sardines are gutted; whitebait isn't.

All the sardines I've eaten fresh and tinned have been gutted.

I didn't know tinned sardines were gutted - learn something new every day here. 

I wouldn't eat whitebait for that very reason - they're not gutted or beheaded!   Bleughh!

The thought of eating fish bowels makes me heave, surely they must taste vile🤮

Whitebait is lovely because they are very young.  If they are big enough to gut they are not nice.

The thing that concerns me about whitebait is that they still have whitebait carp inside them!
