I seriously wouldn't, unless you have amazing willpower. I have worked in quite a few bars and the landladies were serious drinkers. Good luck if you do decide to!
As someone with a drink problem I would find this scenario extremely difficult and dont think I would be able to cope, as libby says you will need to have amazing willpower but perhaps you can do it or perhaps you are putting yourself in an extremely difficult position, its you call but best of luck whatever you decide.
Listen to your inner demons...
Even if you have amazing willpower I think it would be incredibly hard Wizzer so I would say no.
Congratulations on realising that you had a drink problem. XXX

Lol at Sorro.
Oops *Zorro* not Sorro.
My ex did it, he joined AA and had been sober for about 2 months when he applied for the landlords job at a pub in London he had been working in. He got the job and as far as I know is still there, nearly 4 years later and sober.
Being in London he had huge numbers of AA meetings he could go to and his mentors gave him an awful lot of support. I always questioned him about his willpower, he said this was the only way he could do it facing up to his problem everyday head on, if he could do it on a daily basis he wouldn't be tempeted when he went out with friends. He was incredibly dedicated the the AA's teachings (constantly reading their literature and phoning freiends) and I think this is what got him through it, coupled with his incredible willpower.
Good Luck Wizzer x
