1 Pound Hamburger (Minced Beef)� Browned & Drained
1 Pack Taco Seasoning
1 Can Ro-tel Tomatoes (has jalapeno in it)
(can is the size of a Campbell�s soup can)
1 Can Dark Red Kidney Beans
1 Can Corn � Whole Kernel
1 Can of Water
(You can also add carrots, peas, white beans, potatoes - just any vegetable you like best - I always put 3 cans of corn in mine because that is my favorite.)
Mix together & cook until it looks/smells done - although everything is already cooked - so you COULD eat it as soon as it gets hot.
After you put it in your bowl � taste it, it is great that way and less fattening � then put a big blob of sour cream in it and mix it up � then taste it again.
Garnish with black olives, cheese, onions, chives � whatever makes you happy.

Corned Beef Hash, not saying mines the best recipe but it's cheap & easy I've done it for years, it goes down well at New Year & bonfire night and my student nephew has become a dab hand at it, and his new friends love it. Large pan of boiling water (or a frying pan), peel & slice as many potatoes to nearly fill it, and slice 1 or 2 onions, put into the pan of boiling water boil for about 20 -30 minutes. Open tin of corned beef & slice or cube, throw into the pan with 2 OXO cubes. Stir and simmer for as little or as long as you want, after 10 minutes it's tasty enough, but it's nicer when it's had time to stew a bit (say 15 mins!) . Nice chunk of uncut bread, ooh and butter for me great. It was usually a Wednesday meal years & years ago for me when people got pay packets on Thursdays. Now it's more of a quickly made hot hearty meal on rainy days. Different people add a dash of something to it if they want when it's in their bowl, I like mustard, other half brown sauce, daughter ketchup, brother in law Worscester sauce, and my friend curry powder! loads prefer it as it is.
Then there is the tuna noodle casserole. Cook some egg noodles, put in a can of tuna and a can of Campbell's Cream of Mushroom soup and I also like to put frozen green peas in mine - let it heat thru. You can also put it in a casserole dish and top it with crushed crackers and/or cheese and pop it in the oven until the top browns a bit.
Baked Potato Soup
Thick and creamy. Uses leftover baked potatoes. Prep Time: approx. 15 Minutes. Cook Time: approx. 25 Minutes. Ready in: approx. 40 Minutes. Makes 6 servings.
12 slices bacon
2/3 cup margarine
2/3 cup all-purpose flour
7 cups milk
4 large baked potatoes,
peeled and cubed
4 green onions, chopped
1 1/4 cups shredded Cheddar cheese
1 cup sour cream
1 teaspoon salt
1 teaspoon ground black pepper
Directions
1 Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
2 In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
3 Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

1 In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
2 Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
3 Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
4 Gradually add milk mixture to the soup, stirring
constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.

Of course I am serious about the recipes. And the Taco Soup is one that I make alllll the time - I make a huge pot and freeze portions of it to microwave when I don't want to fix anything. Perhaps you should make the Cheeseburger Soup and then give me your commentary - you might not like it but then you just might be suprised :)

Why not try browning off some mince and adding some chopped onion and some tinned tomatoes, this can then be frozen and defrosted and revived as spaghetti bolognaise (add some mushrooms, garlic, oregano), chilli (add mushrooms, chillis, cumin), mince and gravy (peas, stock), burgers (for these I add chilli, egg, basil, garlic, a little ketchup and some mustard). All you have to do then is added potatoes, ric or pasta and veg, which are cheap, for a meal.
Eggs are filling and cheap and you can add veg to those too, i.e. in an omlette or frittata
Jacket potatoes can make a good meal, and you can fill them with anything you fancy!

What happened to plain,simple tasty food. Shepherds pie,(mince and onion in a nice thick gravy topped with mashed potato and grated cheese. Toad in the hole(yorkshire pudding cooked with some nice pork sausage)Corned beef hot pot( sliced onions,sliced potato sliced cornbeef put in a casserole dish in layers gravy on from 2 oxo`s lid on or cover with tin foil put in oven for one and half hours.
