Having said that I can tell you about the North -as that is where I come from
and here we have had several happy holidays.
If you take Belfast as your starting place you will find a whole host of interesting things to do and really lovely places to go.

Fantastic - spent 12 months there after university: was meant to go from Ireland to the US but fell in love with the place and the people. Dublin is excellent, but if you can, go to Cork - it's like a mini Dublin and is not full of brits on the p!ss. I cycled around the EAst, South and West coast and then cut across the island. There's loads of villages and towns on the way to stay in. Have been many times since and it gets better every time. If I had the money I'd buy a second home there. If it floats your boat, the diving off the south and west coast is superb.
I'm from the capital myself and agree that temple bar can be a bit of a no go area simply because its full of stag partys so there usually is vomiting.grafton street is the main shoping area with some great pubs and clubs in the same area,Galway and Kilkenny are also great spots for a weekend away as for the people it just depends who you bump into!
I've been twice, both times to West Cork/Castletownbere area. Absolutely love the place, great food, fishing, golf, people, booze. Very relaxing, highly recommend it to anyone who wants a slower, more laid back holiday. Only bad points, bit pricey and the roads/drivers not so good! Don't let that put you off though.
