Gi Diet - Easy version?

I have recently tried the Gi Diet with my partner, and although we were both doing well we both dropped it due to the sheer amount of time and money we spent on food. Does anyone have any suggestions/books/menus on how we can go back on it without spending a fortune on groceries and every waking minute in the kitchen?

I tend to make things in batches when I've got free time and freeze them. Eating healthily involves quite of bit of vegetable scraping, but plain frozen veg. is just as healthy. There are practical foods like cheese and yoghourts which need no preperation. Good luck to you both.
