Sausage Rolls

I need to make some home-made sausage rolls for work. Has anyone made them before? Did you use sausage meat or chipolatas? Any ideas on how to liven them up - I was thinking of crispy onions and mustard on the pastry.

Any pointers appreciated!

1lb frozen puff pastry.
8 oz sausage meat
salt and pepper to season the meat.
1 beaten egg.
Roll out the pastry into a long strip.
Roll out the sausage meat into a long strip
Put the long strip of sausage meat in the centre of the strip of pastry.
Brush around the sausage strip with the beaten egg
Fold the pastry over the sausage meat , join at the edges, and make slits in the top
Crimp the edges down with a fork and cut them to the size you want.
Brush the tops of the sausage rolls with the egg

Cook in a hot oven for fifteen to twenty mins.
Double the quantities for more sausage rolls.
You can add chutney or onion or whatever flavouring you like to the sausagemeat. Anything on top of the pastry would be liable to burn. The flavourings are better inside the pastry.

I use sausage meat to which I add finely chopped sage, garlic and leek then sprinkle sesame seeds on top of the pastry.

Can't give you any proper measurements I'm afraid. I do it all by eye.
Could you add a small piece of cheddar inside with the sausage so it melts and becomes cheesy sausage rolls
A tasy alternative to sausage rolls is a jalousie like my gran used to make. Roll puff pastry into a large rectangle and roll out a block of sausage meat to fit, leaving about an inch all the way round. Then top with an even layer of branston pickle and sliced hard boiled eggs and top with another layer of pastry. bake until golden at about 180 degrees then leave to cool before slicing. Can be served with salad or as a snack or part of a buffet.

Sausage-Cheese Balls

Prep Time:20 min
Start to Finish:45 min
Makes:7 1/2 dozen appetizers

3 cups Original Bisquick� mix
1 pound bulk pork sausage
4 cups shredded Cheddar cheese (16 ounces)
1/2 cup grated Parmesan cheese
1/2 cup milk
1/2 teaspoon dried rosemary leaves
1/2 teaspoon parsley flakes
Barbecue sauce or chili sauce, if desired


1. Heat oven to 350�F. Lightly grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x2x1 inch.
2. Stir together all ingredients, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
3. Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with sauce for dipping.

Want to make these savory cheese balls ahead? Your options are many! You can:

Cover and refrigerate unbaked balls up to 24 hours. Bake as directed.

Cover and freeze unbaked balls up to 1 month. Heat oven to 350�F. Place frozen balls on ungreased cookie sheet. Bake 25 to 30 minutes or until brown.

It's true. You don't need to cook the sausage before using it when making this recipe.

A honey and and wholegrain mustard glaze on the sausage meat before the pasty stage would be lovely.
