get some choc chip biscuits, dip them briefly in baileys each side and arrange them on a plate in a circular pyramid. Whisk some double cream and cover the mound of biscuits completely, then crumble some flakes over the top and put in the fridge for a few hours. Yuuuuuuuum
i do a baileys and malteser cheesecake
crush digestives and maltesers together in a bowl, mix in some brown sugar. melt butter and add to the biscuit mix. press into a loose-bottom tin and place in fridge.
i use mascarpone for my filling in this one, i would normally use philadelphia but mascarpone has a more subtle flavour. i mix the mascarpone with some caster sugar and some lighly whipped double cream. i add some baileys and por on top of the biscuit mix...i then leave in the fridge until it is set.
i then melt some choc and add some baileys to it to drizzle over the cake when i slice it

i use 1 large pkt of digestives
1 70g bag matesers
125g butter(add more if the mixture is too dry)
30g brown sugar
filling:
4x 250g tubs mascarpone(dont use the low-fat rubbish!!)
50g caster sugar
274ml double cream
30ml baileys
topping:
250g melted choc(white, dark or milk)
2 tbsp baileys(heated slightly)
a plate
1 fork
1 tub haagen daaz vanilla ice cream!!!!!
