Tonight I am serving Salmon quickly marinaded in Teriake sauce and griddled with a vegetable rice. For that I cook the rice with a Kallo veg stock cube and whilst that is cooking I fry onion and thinly cut carrot(roughly julienned) and broccoli and a sliced courgette till browned. I add a crushed garlic clove(s) and then stir in the cooked rice.
After griddling the soaked salmon, I serve it on top of the veggie rice and quickly heat up in the griddle the rest of the teriake thats left and then pour over the salmon and rice.
It is a very quick meal.... approx 30 mins including prep.

Here's a good 'un
You'll need:
monkfish tail
sprig of dill
some parma ham
sun-dried tomato paste
salt and pepper
Lay the monkfish tail out on a chopping board, season it, then liberally spread the sundried tomator paste over it.
Then chop the dill and sprinkle it over.
Finally, wrap the lot in several slices (you'll need about three or four for each portion of monkfish) of the parma ham.
Bake in the over for about 30 minutes at 180.
Serve with new potatoes.
Dead simple and quick, but darn tasty.

Prawn stir fry? Garlic prawns with steak and chips?
Or what about egg fried rice with prawns, ginger, garlic and spring onions with a splash of soy sauce to taste? (one of my favourites)
Or you could make a gorgeous seafood soup (not forgeting to boil the fish, whole mussells and prawn shells. You could add a tin of tomato, garlic and addhalf a glass or more of white wine.... delicious.
I think I fancy fish as well tonight too now I'm getting into it.... or chilli crab.... my speciality.... literally takes about 10 mins to cook as the claws are already cooked (only ever buy large claws and never the whole crab for the meat).
Add 3 x 3/4 of a botte of ketchup (!!!) large splash of fish sauce, ginger, garlic, splash of soy or teriyaki sauce, rice wine... anything else you want to throw in.... lots of fresh chilli and chilli flakes, and chopped spring onion.... YUM YUM!!!! X
