What sauce would go with Gammon?

I'm defristing a nice Gammon joint that I'm going to honey glaze and roast tomorrow, served with new potatoes and green beans. I dont want to make the usual boring gravy to go with it - what sauce would go with it (?link to a recipe would be handy!!!) tx in advance and Happy New Year x

2 tsp Finely chopped onion
1 tsp Brown sugar
2 tsp Whiskey
2 TBSP Flour
2 TBSP Butter
3/4 cup Water or stock
Salt or pepper to taste.
gently fry the onions in a little butter . Remove from heat and stir in flour gradually. Add stock or water. Return to heat. Add sugar and bring to the boil.
Simmer gently for a couple of minutes to cook the flour. If it's a bit thick add more stock or water. Add whiskey and season to taste.
I like Hollandaise sauce with Gammon too ..cheat and a buy a packet one ..just add a bit more butter than it says on the packet and a good twist of black pepper. Luvverly !

I'm probably too late but there is only ONE sauce for gammon, new pots and veggies ......and that's Parsley sauce.
I cooked a gammon for Boxing Day - so far as well as sandwiches most days we have had it with the aforesaid parsley Sauce (with mash and green beans and broccoli), with Jacket Spuds and salad, with sauteed spuds, fried eggs and peas, and in a pasta sauce with blue stilton. Still have enough for two more meals, I love it as after Christmas it's so good to have i nstant ingredients. Ooh, forgot thr Turkey & Ham Pie as well
