Go into iTunes preferences, and into the import tab. Is the box at the bottom, error correction, ticked? If so, untick it. This can offer a dramatic speedup, and you may find you don't need to use it anyway.

How fast can your CD drive read? Is it a fairly new drive?

Try importing with some other program like windows media player. Is it about the same speed?
