Low fat recipes needed.!

Hi guys :)
I am trying to eat much healthier in order to lose weight and feel better but I don't want to get into the rut of having the same things every day ie friut,grilled meat and veg,salad etc.
So do any of you have some really low fat /calorie recipes I could try? Maybe a vegetable soup one or casseroles??

1 Ham stock cube
1 Vegetable stock cube
1 Onion - chopped
1-2 Carrotts - chopped
1 courgette -chopped
Half a swede - chopped
Black pepper
Garlic
Tomato puree
Mixed herbs
Spaghetti - broken into small pieces
(Optional extras - lean bacon, cut into pieces. baby sweetcorn)
Put everything except the spaghetti into a large saucepan with plenty of water.
Bring to the boil and then simmer for approx. 30 minutes.
Add the spaghetti and cook for at least another 20 minutes.
This soup tastes best if left to simmer for quite a while.
I have left out the quantities of the garlic ect. as this comes down to personal taste. As a guide I use 2 large tsp of crushed garlic, 2-3 tsp of mixed herbs, 2-3 tbsp of tomato puree and a good shake of black pepper.
This should make enough for at least 6 people. when cold place in individual containers and freeze. It's even nicer when it has been frozen first!

I saw Jamie Oliver on TV once, and he said the best thing to do is to forget the so-called "Low Fat" products, as they are usually bad for you in other ways, and instead choose things that are naturally less fat, but good quality products that haven't been messed with.
I've found that you can just tweak the things you currently make to make them a bit more healthy. For example, you can switch from beef mince to pork, chicken or turkey mince. I've used pork mince for a while and it's much tastier and so much healthier.
When I make something like a curry or a chilli, I now add less meat and add a variety of vegetables. This usually means I have extra to freeze for another day. Mushrooms and courgettes are fab in a curry. Also, I've discovered that if you microwave a garlic flavoured pitta bread, it's a very good healthy substitute for naan.
Fajitas are a good healthy option as well, especially if you use chicken, turkey of prawns. Just really stuff them with loads of home-made salsa and salad...yummy!
Try doing different things with your meat, like making kebabs with different meat and veg. Another thing I like to do is cook a chicken breast in the oven with a tin of pineapple, which I'd definitely recommend you try.
