Hi, Thought my experience of hong Kong may help, I grew up there. The best areas of interest that you should be looking for is around Causeway Bay (lots of affordable shopping) try The Excelsior hotel ot The Park Lane. Tsim Tsa Tsui (e.g Nathan Road has lots of affordable shopping and good deals in electrical stores), it's on Kowloon side - Hotel Miramar is 3.5 stars but in the centre of the hub. In Central on HK island (also has the business district which has amazing buildings try the JW Marriot or Conrad hotel you'll have a wail of a time right in the centre of everything although it is 4.5 stars, there's also lots of shopping although expensive stores. The Peak Tram to the Mid Levels is an experience for views of HK done at night and during the day is both good) on HK Island.
Humidity wise November to a visitor may be still be a bit humid not very much though, around 50-60 % humidity, summer is usually 80% or above. November is certainly cooler, and a better time to visit, but I have always been happy with HK's air conditioning so if you wanted to cool down a bit you can always pop into shops or buildings to cool down!
