Does anyone have a recipe for beetroot as a cooked vegetable.We have lots of it in the garden and are getting tired of it pickled!

quarter your beets, make tin foil parcels for them, drizzle with olive oil, rosemary, basalmic vinegar, black pepper (or any variation of this kind of thing you fancy), then bake them. they need quite a long time, maybe 45 mins and id put them in on about gas 6-7. sorry i cant be more specific about that, im a bit of a 'suck it and see' cook!

personnaly i just pickle it or just boil it abd eat it fresh :-)

I love boiled beetroot served in cheese sauce. I am sure you can cook beetroot quite quickly in the microwave, also it makes super chutney.

We just put the whole beetroot in foil with a little water and seal. Bake in the oven and it tastes a lot sweeter than boiled beet.
