I'm having Burns night at my house next weekend, I love haggis, but I'm not Scottish so need some advice... I'll do mashed neeps/tatties, what else is traditional to serve with haggis? I've heard about a whiskey/cream based sauce that you pour on the haggis - is it nice? And if so, how do you make it? What other veggies should I do? I thought leeks or greens might be nice...? Also, any ideas for a pud to follow?
Cranachan is a nice dessert ..
1 pint double cream
3oz porridge oats
7 tbsp whisky
3 tbsp honey
1lb raspberries... you can use frozen ones
Toast the oats in a frying pan, being careful not to burn them.
Lightly whip the cream until it reaches the soft peak stage, then fold in the whisky, honey, oatmeal and raspberries.
Serve in dessert glasses garnished with a few raspberries and a bit of mint if you have any.
Shortbread with the cranachan or coffee would be nice too. When i did a Burns night here I had a cheese course with oatcakes too. If you want a starter then Scottish smoked salmon would be good.
I bought some tartan ribbon from the local haberdashery shop and tied little bows round the stem of the wine glass. Sounds naff but itl ooked quite goodand the guests liked it.
Neeps and tatties, nothing else. The cranachan recipes sound great but otherwise why not just some Scottish cheeses and oatcakes - and don't forget the whisky.
Cranachan is my favourite dessert - raspberry crancachan - gorgeous. In case you don't know the neeps were turnips that's the traditional thing to serve with haggis along with the tatties
