In Tuscany I ate a lovely dish which was made from cow spleen. Back in UK I am finding it impossible to find a butcher that sells it. Any suggestions ?
Surely a butcher could order one from his wholesaler or even directly from the abbatoir?
For culinary purposes, is there another word for spleen?
According to my small dictionary, the Italian for spleen is "milza". What was the dish called that you liked so much? I am fond of offal, but you have yet to convince me about eating spleen.
It is vile. I ate it (or tasted it, I should say) once in Bolzano in Alto Adige (Northern Italy) once. It was a spleen broth served with croutons spread with spleen pate. Vile. I didn't discover what it actually was until a couple of days later.
