I got 2 big celeriacs in my organic veggie box this week, I have no idea what to do with them, any suggestions? I am not sure if I have ever actually eaten one. Smells good though.

A delicious vegetable.Try celeriac and potato mash - just boil the 2 together and mash in usual way.

Or cut the celeriac into "chips" boil and then coat with creme fraiche, grain mustard and herby sauce.

I think chunks would also roast well, tho' I haven't tried it.
Nice veg. Treat a bit like a tattie. Peel and dice and then mash, puree, roast, bake, or you can chip...

http://www.astray.com/recipes/?search=celeriac has 100+ ideas inc. using as a side dish.

Combinme with attties or carrot for a flavoursome mash. Works well with butter/cream by the way. Use as a topping for pies in place of potato. Add to soups as a thickening agent. Use to make simple fish cakes in place of potato, etc etc etc.

Link to the Veg Box info site - no celeriac details though!...... http://www.vegbox-recipes.co.uk/index.php ... but lots of other handy info. might be of use.
