"stalks of hey"?

Is it correct if I say "the bird picks some stalks of hey, dry leaves and twigs to make a nest"?

if you mean the stubble left after haymaking, then I would say 'the bird picks some hay stubble, dry leaves and twigs to make a nest'

'Hay', not 'hey'. And 'dried leaves', not 'dry leaves'. This helps to distinguish between the dead leaves on the ground, and the green leaves on a tree that are dry simply because it hasn't been raining.
You could say 'loose stalks of hay'. (Dot - stubble is what's left sticking out of the ground with the roots still buried. The bird would have a job pulling out such stalks).

Birds don't nest at a time when there is stubble in the fields, they nest in spring time when the grass is still growing. They'll pick up bits of ditritus, sticks, dried stalks from last year etc. In my garden they steal the hay I keep for my chickens from the greenhouse - and twitter happily whilst they're doing it!
