Water carriers, those where used in the middle ages and till the 19 century, this was a well payed job but back breaking, has they where needd to carry the equivalent of 24 bottles of water nowedays. The thing was allso that they where needed to take care not to spil to much on the to their custommers. As you mayor not know carry out a job like this in Edinburgh was a daily chalange as they where often needed to carrying the water up to 6 or 7 floors High.
An other job who disapered are the Torch porters. Those porters where mostly kids between the 5 ad 10 years old their job was to carry burning torches and leading people to their homes at night time, this whas til te street lights where invented. You can allso immaginethe risk for those kids in the time, who where easy targets for all sort of vilains. THe last jobs that I know whas the precursor of the modern taxi, and it was the chair porters, now just imagine that you are again in Edinbrugh, in the middle of the winter of about 22.30, just after you heard people screaming " Garde a Loo" Comming from the French words "Garde a L'eau" meaning watch out for the water. I can tell you that it was not only water who was trown trough the windows. Every thing who was not needed in the house was trown outside. This means that even dead animals, broken crocquery and the favorite one excrements and vomit.
So let's go back to the chair porters, I am sure that you see the picture. So guy's where needed to Clime a steep hill with snow, and all sort of rubbish trown onto the streets. and that all with anti sleep on their shoes. Nice job!!!
