Hi, I am also addicted to mushrooms and I love them stuffed, which is as follows:
8 medium sized mushies, choose ones with nice big stalks.
2 big gloves of garlic
3 shallots, shallots NOT spring onions
2 tablespoons fresh parsley or equivalent dried
Salt and pepper to taste
1 tablespoon butter
Six tablespoons fresh breadcrumbs, whole meal or white.
Olive oil
Carefully remove stalks and chop finely
Chop garlic finely
Chop shallot finely
Heat butter in small fry pan
Saut� stalks and garlic for two minutes
Add shallot and saut� a further two minutes
Allow to cool slightly
Add breadcrumbs, parsley and seasoning
Pack loosely into mushrooms
Put mushies onto a buttered dish
Drizzle each with a teaspoon of olive oil and bake in a moderate oven,
180� for fifteen minutes.
Thought you might be interested, I store mine in aluminum foil, shiny side to the mushies and only enough in each packet for one meal. They keep for ages this way.
