rest your salmon on a large piece of foil.
add slice of lemon or cut half of lemon grass.
seal the foil tight to create a case for the salmon to be steamed in your oven for 15 to 20 min.
boil some baby potatoes, when soft , drain them
with a mayonnaise of your choice i would choose the best make but the light one.
2 big spoonfl of it or cream fraiche.
add lods of lemon and lime a little hot chili but little and a hint of french dijon mustard add water you do not want the sauce too thick.
add coarse black pepper and lods of chives in sauce and mix with potatoes. taste if too bitter add little sugar in sauce and mix well
