Why does mineral water that has trickled through mountains for centuries have a "use-by" date?

Either that or the inclination of these mountains is less severe than i thought.
On a side note i dont understand why people pay for the taste of plastic in their water. Water from glass bottles or taps actually taste like water dont they?
