I always by the 'basic' flour and have had no probs. I find that the difference in taste happens when i use marg instead of butter.

If I am making a plain sponge cake maybe to fill with jam and cream I always dollop in a bit of vanilla flavouring or sometimes I use almond flavouring

The best way is to experiment because IMHO using the cheaper flours makes no difference to the finished product....cake tins always empty quickly in my house...lol
Hotpink - I made that same mistake once - because I thought flour is flour. I was wrong. I went back to my usual brand.
I honestly don't think the brand of flour makes any difference whatsoever.
There is hard and soft flour hard for bread etc and soft for cakes and baking
