Recently on a trip to Las Vegas I bought some jewellery. Would anyone know if I'm able to claim back the sales tax & if so how would I go about this.

No you can't reclaim it.

Louisiana is the only US state that has such a scheme and even then it's restricted to certain shops and has to be done before you leave the US..
