Food Safety Act 1990 and the Food Safety (General Food Hygiene) Regulations 1995 are effected by local Environmental Health departments in the case of contamination of food stuffs from poor hygiene conditions and food handling and instances of food poisoning traced to surface contamination.
The Food Standards Act 1999 will also be used in a prosecution if deemed necessary if food production premises also allow other situations to occur that lead to contamination, including inapprproate food storage, food contact materials and the like. United Biscuits have just recalled a stack of the Go Ahead! products as there are some with strips of wire baked in them - ooops . . .! - under this Act.
The use of colour coded boards as defined in the relevant Guides is designed to avoid the use of the same prepararion surface for cooked and un-cooked produce.
