'Nicely' torn up fresh mozzarella, shredded fresh basil leaves, thinly sliced really fresh sweet tomatoes, olive oil and seasoned with salt & pepper. This makes a real Italian treat for the eye - red, white and green - just like the flag......can't get any more original than that.....add a few ciabatta croutons fried in truffle olive oil for a further 'showing off' if you want.
Or try an Insalata Tricolore - grill some red and yellow peppers and sweat in a paper bag to remove the skin. Core and finely slice a bulb of fennel (remove the outer tough bits first).
Shred the peppers, add to the fennel, douse in best olive oil and top with finely cut parsley. Season, serve with ciabatta croutons. Yum...
Another Italian salad would use artichoke hearts, black olives and finely diced white onion, dressed with a herbed olive oil - just what every British kid is familiar with?! Might be a bit too 'grown up' perhaps..
