fry a onion in olive oil then then add to your mash. years ago before the egg scare my sister always added a raw egg and butter to her mash.

Hi - just wanted to mention when you make the champ (ireland) you need to simmer the chopped spring onions (scallions in Ireland) in a taste of milk and butter then pour onto mashed potatoes. Enjoy
