wht are your best tips and suggestions for a great BBQ (using charcoal)

1. Keep a spray bottle of water at hand in case flare ups occur.

2. Marinate the meat the night before.

3. Soak the wooden skewers in water for at least 30 minutes before putting the fruit or vegetables or meat on them.

4. Low and slow cooking works best for me.
Don't cook too many different things - we find it easier to cook plain meats and then provide various dips and salads.

Put some sprigs of Rosemary onto the coals just before you start cooking - fresh sprigs smoke a bit but the smell is divine.

When cooking things like burgers or fish, don't put them directly onto the grill. Use a baking tray (preheat first) then if they crumble a bit nothing falls into the flames.

Hurrah for a traditional charcoal BBQ!!!

Part cook sausages in the oven beforehand (15 minutes @ 200C) to remove excwss fat. Stops then flaring up when you finish them off.
