It's funny though because I have sky and they connected it to the phone line but a week later I unplugged it from the phone box and it's not been plugged in since. All works fine still.

I have a cable phone line and it's fine. The terms and conditions state that you have to leave the phone line plugged in for the first year of your contract if you've taken on a special offer but they don't police this apparently.
From the Sky website: "If you have taken up the free Sky box and minidish offer, the Interactive Discount contract, Sky multiroom subscription(s), Sky+ and/ or Sky HD, then as part of the installation we must connect your box to a working telephone line. "

I have heard of a few people who have had Sky installed without having a landline at all. I think that, during installation, the engineer typically pairs up the Smart card with the box over the phone line, yet there are other ways of achieving this apparently.
Also, allegedly , the Sky box will ring Sky at a quite time (middle of the night) passing on information about viewing habits. Maybe that's why they want your phone line.

I recently got Sky+, and really didn't want the phone line connected, as it would have been unsightly.
When the engineer arrived, I said that I didn't want it, and he said that it was no problem.
He installed the system in 15 minutes with the phone line plugged in, then unplugged the wire from the phone, rolled it up and put it behind the TV in case we ever need it.
I'm not sure why you need it, but possibly to purchase movies or play games, in which case you can just plug it in for as little or as long as you need.
The red button still works without the line connectd, as the engineer told me that all of that information comes through the dish.
So in summary, you definitely DO NOT need a phone line permanently plugged in.
