what cut of beef and how is it cooked to get it as tender as when you have, for example chinese beef curry?

rice cakes and oat cakes

I'm not an expert on meat by a long shot but i'm sure that it is the real toughest, cheapest meat that is used in curries.

The secret is the way it's cooked....slowly !!!
