Can I just double up a recipe if I want to make a larger version of a particular cake recipe?

ususally yes, but the tin size change may mean that you need to cook it at a slightly lower temp to ensure that the edges don't burn while the middle is cooking. Best advice is to try it once before you do it for company!! Also for some reason, you may find that the mix comes out a little too dry or too wet so be prepared for that
The larger volume will mean it needs more cooking. You could make two cakes like the original (split the mix before baking) and put them together with jam in the middle.
