I have let the pickling type of cucumbers grow for too long, they are large and yellow, still firm with tougher skin. Can they still be pickled? Thanks

No, for a number of reasons... but if you're leaving any cukes on the vine until they turn yellow, you are prohibiting the vine from setting and growing any more fruit. Don't let them go yellow or over large...
