i live in leigh near manchester never tryed to get mustard leaves?
ok then will tell u how to make vegetable saag.. you can use what ever vegetables you get there..
you'll need some Tomatoes (about 3 )
4 tblspoons of Corinader Leaves or called cilantro (i think)
abt a teaspoon Jeera (cumin seeds)
1 tsp of Dhaniya Seeds (corriander seeds)
Black Pepper corns(a little)
2 Cloves
1 Cardomom (we call it Elaichi/)
1 Inch piece Cinamom Stick( Dalchini)
1/2 cup scrapped Coconut
2 Green Chillies (can use more if your taste is hotter)
1 inch piece of Ginger.
1/2 tsp Poppy Seeds( Khuskhus)
Boil what ever vegetables you have in a Cooker or Steamer.(Except the Onion).Grind all the above ingredients in the Blender using a little Water.Allow the vegetables to Cool.Heat 2 tbsp oil in a Vessel add the Chopped Onions. When the Onions turn translucent, add all the vegetables and the paste you ground. Keep stirring so that the gravy mixes well with the Vegetables. Add required amount of salt. Allow it to Boil for about 5 minutes (Uncovered).you can a little milk or yoghurt into it maybe a tablespoon.
hope u get the ingredients there n enjoy the dish!!
happy cooking!!!!
u could also add a little cubes of paneer (cottage cheese) along with the vegetables!

do tell me how you liked it once you try it...

thanks very very much if you have any more email [email protected]
thanks again tony
'Saag' is spinach, so have a look at the veg recipes here: http://www.nandyala.org/mahanandi/

Might have something you recognise. Do you think its 'saag paneer'? This is spinach and curd cheese curry. Other ideas at http://www.mamtaskitchen.com/index.php which has a good selection of recipes too.

Few other sites on web so have a trawl.
