Partly a rebellion against the black bull stickers used elsewhere in Spain (which started as the brand logo for Osborne brandy, and got adopted as an unofficial national symbol.) The Catalans like to differentiate themselves and wave two fingers at the federal Spain. Why they chose the donkey is not known, but it's a laugh. If you read Spanish you can see the background explored at http://www.viciao2k3.com/XForum-fid44-postid-487.html
You can buy them on line, but again only in Spanish. Search Google for "burro catalan".
