healthy dinner

what would be a really healthy dinner for me to have tonight? I'm going though a detox/healthy diet stage only really eating fruit veg nuts natural yog and anything super healthy. Can anyone think of anything I could have for dinner that would fit in with that...apart form Stir fry

Onions, garlic, leek, celery, mushrooms, peppers, courgettes etc etc (plus chillies of course), all chopped up and saut�d in a little oil till softened. Add a can of plum tomatoes (mashed up) and a similar amount of water, plus a pinch of salt and a pinch of sugar, fresh herbs, then a can of cooked, rinsed and drained chick peas (for example). Let everything bubble away on the stove until the tomatoes have broken down and given in to their fate.... If you have some left over red wine (haha) you could add that as well.... Serve with a slow acting carb like brown rice or couscous, cracked wheat or even potatoes or tortillas. This casserole will taste even better the next day, so be sure to make plenty !
