Pot roast chicken (or any kind of meat) always goes down well - put loads of veg (carrots, leeks, onions, parsnips etc) in the bottom of a large pot, put a whole chicken on top (season it on top with salt, pepper, herbs etc), surround with peeled potatoes (or new potatoes to save time and energy on peeling!), then pour in a couple of inches of veg or chicken stock (Just Bullion powered stock tastes the best and is additive free - so probably Crohns-friendly). Oven cook for around 1 1/4 hours (depending on size of chicken). It only takes a few minutes to prepare and can be popped in the oven and left till done. When done, the potatoes are soft underneath and crispy on top, the chicken is moist and steamed yet has crispy skin and the veg underneath are soft - and all comes with its own gravy. Put in the centre of the table for everyone to help themselves! Dead easy! Have a great holiday!
