I know more or less how they are made ie individual panels sewn together inside out - but how is the last panel sewn in place ?!

If the stitching of the last panel is loose (lot's of slack) then the last panel could be attached to the ball quite easily and then the thread pulled taut when finished to complete the spherical shape.
