Well, I found out two ways, one from a Jamie Oliver cookbook, and one from a friend of a friend. They are both similar, but use different cheeses. You marinade the strawberries in balsamic vinegar and 4 tablespoons of castor sugar for two hours. Then whisk some more castor sugar into ricotta cheese until it tastes sweet enough. Ricotta goes on dessert plate, strawberries and vinegar drizzled over the top, mint leaf to finish.
I made the dish and I think Cetti is right, the balsamic vinegar must have been too strong as the smell was overpowering. However, the end result was rather yummy, if a little sicky. Perhaps I need to finetune it.
