Freezing tomatoes.

Can you freeze whole, fresh tomatoes, or do they go nasty as some foods do ?

For more on marking an answer as the "Best Answer", please visit our FAQ.I have a book on 'will it freeze' which says you can freeze tomatoes but they will only be good for cooking. Place whole tomatoes into boiling water for a few seconds then put into icy cold water till cold, the skins should then peel off easily then pack into freezer bags or rigid containers. Reccommended freezer life is 1 year. Happy freezing. Kath.
I had a glut of home grown tomatoes last year, just couldn't keep up with them, in desperation i just quartered and froze a load, a couple of weeks ago i rescued a bag from the bottom of the freezer, and made a lovely pasta sauce, the kids went mad for it, although i would suggest skinning them before freezing, cos tomato skins seem impervious to blenders, they just sort of coil up and avoid the blades! btw the flavour was still excellent
