Healthy meal idea for someone who doesnt like veg?
Hi
Me and my partner have decided to eat a bit healthier, i love veg and salad, my partner on the other hand doesnt eat it apart from potatoes and the odd carrot, any ideas what i could do for him? ive made him chicken stuffed with cheese and wrapped in bacon he loved it also he likes bbq sauce if anyone knows what i could do with that as a healthy option?

For more on marking an answer as the "Best Answer", please visit our FAQ.Hi A - don't think you can really make cheese stuffed bacon wrapped chicken the most healthy of meals even with bbq sauce - but start with the best quality of chicken, not the cheapest watery stuff, use a first class cheese, and a dry cure bacon, then bake not fry and that would be a start..
Serve with rice boiled in veg stock for extra flavour, and add some peas to the rice at the end to add colour and some veg too. Chick peas, chopped broccoli, carrot or beetroot can all be added as well - this is a bit like a suggestion to get kids interested in better food!
Make your own sauce too - shop bought is stuffed with sweetners and colourings etc...

Hope this of some help, and perservere with getting the veg intake up as it will only help a better diet.
Don't forget that a lot of quick cook Chinese meals have veg as a base, so maybe try the wok approach too - e.g. stir fry bbq chicken with diced bacon and Chinese veg??

Aymi - I just watched the Oprah show - she had Jerry Seinfelds wife on it and she has written a book about that very thing - pureeing vegetables and hiding them in foods for her children. They served samples to Oprah and the audience and they LOVED them.
I didn't catch the name of the book, but you might find it on the Oprah website.

Try an online search if you want the book - just been released so probably not on the cheapest lists yet?...and you don't jhave to have kids to give the recipes a go of course!
