How come beef sometimes has a shiny, almost translucent coloring on it?

Do you mean cooked beef? It's probably all the fat glistening on it.

sorry about posting there! my mistake. It is cooked beef, but it's doesn't look like fat at all. It's even on very lean parts when you cut it open. Not sure if it gets that way from sitting around in the back for a while or not?
