Christmas Cake Icing...

Hi, could anyone please help me..my mum really wants to make a christmas cake this year but it put off as the last few times she tried to ice the cake the icing turned out really brittle (you'd need a sledge hammer to cut into it) has anyone got recipes or good tips for soft icing..thanks...

add glycerine to the mixture, tho I find that just egg white and icing sugar keeps without going brittle for several weeks
The ready to roll stuff is quite good too as it is pliable and doesn't set as stiff, gives a lovely smooth finish but is more expensive.
Otherwise as quizmouse says use glycerine, but not too much as it's a laxative lol
