2 cups mashed sweet potatoes
� cup butter, softened ( I prefer Danish Butter)
2 eggs, separated
1 cup packed brown sugar
1/4 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup evaporated milk or cream
1/4 cup caster sugar
pie crust I make my own, but I suppose you could buy one of those ready-made ones.
DIRECTIONS
Preheat oven to 200 degrees
Combine the sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Blend well, using a wooden spoon.
Beat egg whites until stiff peaks form; add 1/4 cup sugar and fold into sweet potato mixture.
Pour into pie shell and bake at 200 degrees for 10 minutes. Reduce heat, then bake at 175 degrees C for 30 minutes or until firm. The texture should be just as with your pumpkin pies.
In the autumn I often make this. Alternatively, for dinners when we have chicken, I slice up sweet potatoes, then boil them until the consistency is soft.
Mash them with double cream, butter, course pepper, salt, and about two tablespoons of brown sugar. Place into a baking dish, add a few minimally thin squares of butter on the top, sprinkle with about a tablespoon of brown sugar and bake at 200 degrees for twenty minutes. It�s one of my children�s favourites!
